Had no idea you could do this in casserole form! It’s delicious!

– 8 English muffins, cut into 1-inch pieces
– 2 cups of diced cooked ham
– 8 large eggs
– 2 cups of whole milk
– 1/2 teaspoon of onion powder
– 1/2 teaspoon of paprika
– 1/4 teaspoon of kosher salt
– 1/4 teaspoon of garlic powder
– 1/4 teaspoon of black pepper
– 1 cup of shredded sharp cheddar cheese
– 1 package (1.25 ounces) of hollandaise sauce mix (or homemade hollandaise, if you prefer)
Directions
1. Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.
2. Spread the English muffin pieces in the baking dish and sprinkle the diced ham evenly over the top.
3. In a large bowl, whisk together eggs, milk, onion powder, paprika, salt, garlic powder, and black pepper. Then pour this egg mixture over the English muffins and ham.
4. Let the casserole sit for about 5 minutes, allowing the English muffins to soak up the egg mixture. Then sprinkle the top with the shredded cheddar cheese.
5. Cover the baking dish with aluminum foil and bake for 35 minutes. Remove the foil and continue to bake for another 15 minutes until the top is golden brown and the center is set.
6. While the casserole is baking, prepare the hollandaise sauce according to the package instructions (or make your own).
7. Once the casserole is done, let it cool for a few minutes, then drizzle with the hollandaise sauce before serving.
