CHEESE AND ZAATAR PASTRIES

• 2 cups all-purpose flour
• 1 teaspoon instant yeast
• 1 teaspoon sugar
• 1/2 teaspoon salt
• 3/4 cup warm water
• 2 tablespoons olive oil
• 1 cup mozzarella cheese, shredded
• 1 cup feta cheese, crumbled
• 1/4 cup fresh zaatar leaves (or 2 tablespoons dried zaatar mix)
• 1 tablespoon fresh parsley, chopped
• 1 egg (for egg wash)
Instructions:
1. Dough Preparation:
• In a large mixing bowl, combine the flour, yeast, sugar, and salt.
• Add the warm water and olive oil to the dry ingredients and mix until a dough forms.
• Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
• Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
2. Cheese & Zaatar Filling:
• In a separate bowl, mix the shredded mozzarella, crumbled feta, zaatar leaves, and chopped parsley until well combined.
