CHEESE AND ZAATAR PASTRIES

3. Shaping the Pastries:

• Once the dough has risen, punch it down and divide it into 12 equal pieces.
• Roll each piece into an oval shape, approximately 5 inches long and 3 inches wide.
• Place a heaping tablespoon of the cheese mixture in the center of each oval.
• Fold the dough over the cheese filling and pinch the edges to seal, forming a boat shape.
4. Baking:
• Preheat your oven to 375°F (190°C).
• Place the pastries on a baking sheet lined with parchment paper.
• Beat the egg and brush each pastry with the egg wash to give them a golden color when baked.
• Bake for 15-20 minutes or until the pastries are golden brown.
5. Serving:
• Remove the pastries from the oven and let them cool slightly on a wire rack.
• Serve warm and enjoy!
Tips:
• For a more traditional flavor, mix some dried zaatar mix with olive oil and brush it on the pastries before baking.
• You can also add a touch of sesame seeds on top of the egg wash for extra texture and taste.
• If you can’t find fresh zaatar leaves, dried zaatar mix is a great substitute and widely available at Middle Eastern stores.
