Meatloaf with Mashed Potatoes and Cheese

Ingredients:
– 1 1/2 pounds Ground Beef (85/15)
– 1/4 yellow onion, finely chopped
– 2/3 cup seasoned dry breadcrumbs
– 1/3 cup whole milk
– 1 large egg, lightly beaten
– 1/2 teaspoon Kosher salt
– 1/4 teaspoon coarse ground black pepper
– 2 pounds potatoes, peeled and cut into 1″ chunks
– 1/3 cup unsalted butter
– 1/2 cup whole milk
– 1 teaspoon kosher salt
– 1/4 teaspoon coarse ground black pepper
– 1/2 cup bacon bits, cooked and crumbled
– 1 cup cheddar cheese, shredded
Preparation:
1. Preheat the oven to 375 degrees.
2. In a large bowl, gently combine beef, onion, breadcrumbs, milk, egg, salt, and pepper. Press the mixture into a 9×9 baking dish.
3. Bake uncovered for 15 minutes, then remove and drain any excess fat.
4. While the meatloaf is cooking, add potatoes to a pot with enough water to cover. Bring to a boil on high heat and cook for 15 minutes.
5. Drain the water from the potatoes and add the milk, butter, salt, and pepper. Mash everything together until creamy.
6. Spread the mashed potatoes over the meatloaf and top with cheese and bacon.
7. Bake for an additional 15 minutes, until the bacon is sizzling, the cheese is bubbling, and the mashed potatoes are slightly crispy.
