Loaded Crack Potatoes

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, paprika, dried thyme, salt, and black pepper until evenly coated.
3. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
4. Roast in the preheated oven for 30-35 minutes or until the potatoes are golden and crispy, flipping them halfway through.
5. Remove the potatoes from the oven and sprinkle shredded cheddar cheese over them. Return to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
6. Once out of the oven, top the loaded potatoes with cooked and crumbled bacon, sliced green onions, and dollops of sour cream.
7. Serve the Ultimate Loaded Potato Extravaganza immediately as a side or appetizer.
