It’s my 4th time making this and it doesn’t get old!

– 1 1/2 pounds of boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
– 1 cup raw cashews
– 1 bell pepper, diced (color of choice)
– 1 small red onion, chopped
– 3 tablespoons soy sauce
– 2 tablespoons hoisin sauce
– 1 tablespoon rice vinegar
– 1 tablespoon sesame oil
– 2 cloves garlic, minced
– 1 tablespoon freshly grated ginger
– Salt and pepper to taste
– Optional: Sesame seeds and chopped green onions for garnish
Directions
1. Preheat your oven to 375 degrees F (190 degrees C) and line a sheet pan with parchment paper for an easy cleanup.
2. In a large bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, garlic, and ginger to create a mouth-watering marinade.
3. Toss the chicken pieces in the marinade and let them get friendly for about 15 minutes (if you’ve got a bit more time, letting them marinate longer will only up the flavor game).
4. Spread the marinated chicken, cashews, bell pepper, and red onion out on the prepared sheet pan. Try to keep everything in a single layer to ensure even cooking.
5. Season with a pinch of salt and pepper, then pop the sheet pan into the oven.
6. Bake for about 20-25 minutes, or until the chicken is cooked through and the cashews have turned golden brown.
7. Remove from the oven, give everything a good mix right there on the pan, and if you’re feeling fancy, sprinkle with sesame seeds and chopped green onions.
Variations & Tips
– Veggie Swap: Feel free to throw in whatever veggies you have on hand – snap peas, broccoli, or carrots are all great choices.
– Go Low-Sodium: If you’re watching your salt intake, opt for low-sodium soy sauce.
– Add a Kick: Like it hot? Add a drizzle of Sriracha or a sprinkle of red pepper flakes to spice things up.
– Meal Prep Magic: This dish works wonders for meal prep! Store individual portions in the fridge and you’ve got lunches ready to go for the week.
– Cashew Conundrum: If cashews aren’t your thing or you just ran out, peanuts make a great substitute.
And there you have it! This Sheet Pan Cashew Chicken is deceptively simple but packed with flavor. It’s the kind of tried-and-true recipe that keeps the chaos of the weekday at bay, balances our time crunch, and honestly, just makes our taste buds very, very happy campers. Enjoy!
