Creamy Parmesan Noodles

– 8 oz thin spaghetti
– 6 oz cream cheese, cubed
– 1 tsp minced garlic
– 3 Tbsp butter
– 3 Tbsp sour cream
– 5 Tbsp milk
– 2 to 3 tsp salt-free Cajun seasoning
– ½ tsp onion powder
– 1 tsp dried parsley
– ½ cup grated parmesan cheese
– Salt and pepper, to taste
Preparation:
Step 1: Cook spaghetti according to package directions. Drain.
Step 2: While spaghetti cooks, prepare the sauce. In a large skillet over medium-high heat, sauté garlic in butter for 1 minute.
Step 3: Add the cream cheese, sour cream, milk, Cajun seasoning, onion powder, salt, and pepper. Reduce heat to low. Cook and stir just until smooth; do not boil. Remove from the heat and stir in parmesan cheese.
Step 4: Add cooked pasta to the sauce and toss to coat. Sprinkle with parsley.
Cooking Note:
Be careful not to overcook the sauce once you add the cheese to avoid it becoming grainy. Stir gently until the cheese is fully melted and the sauce is smooth.
