Chocolate Sauerkraut Cake with a Surprising Twist

Recipe

Ingredients:

2 cups all-purpose flour
1 1/2 cups granulated sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup sauerkraut, rinsed and drained
1/2 cup vegetable oil
1/2 cup hot water
2 large eggs
1 teaspoon vanilla extract
1 cup boiling water
Directions:

Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
In a blender or food processor, puree the sauerkraut until smooth.
Add the sauerkraut, vegetable oil, hot water, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
Stir in the boiling water and mix until the batter is smooth.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Remove the cake from the oven and let it cool in the pan for 10 minutes.
Transfer the cake to a wire rack to cool completely before frosting.
