Charred Lemon-Garlic Vinaigrette

Preheat a grill pan or grill over medium-high heat.
Place the lemon halves (cut side down) and garlic cloves on the hot grill.
Grill the lemons for about 3-4 minutes or until charred and caramelized. Grill the garlic cloves for 2-3 minutes until lightly charred.
Remove the lemons and garlic from the grill and let them cool for a few minutes.
Squeeze the charred lemon juice into a bowl, removing any seeds, and finely chop the grilled garlic cloves.
In a separate bowl, whisk together the charred lemon juice, grilled garlic, extra-virgin olive oil, honey or maple syrup, and Dijon mustard until well combined.
Season the vinaigrette with salt and freshly ground black pepper to taste. Adjust sweetness or acidity by adding more honey or lemon juice if desired.
Transfer the vinaigrette to a jar or container with a tight-fitting lid and store it in the refrigerator until ready to use.
