Can’t get enough of this! Love making extra batches!

– 4 large boneless, skinless chicken breasts
– 2 teaspoons of olive oil
– 1 teaspoon of garlic powder
– Salt and pepper to taste
– 1 cup of fresh spinach, chopped
– 1/2 cup of cream cheese, softened
– 1/4 cup of grated Parmesan cheese
– 1/4 cup of shredded mozzarella cheese
– 2 tablespoons of mayonnaise
– 1 teaspoon of Italian seasoning
– 1/2 teaspoon of red pepper flakes (optional, for a bit of kick)
Directions
1. Preheat your oven to 375°F (190°C), like you’re warming it up for a batch of your favorite cookies.
2. Take each chicken breast and, being as gentle as if you’re tucking a child into bed, create a pocket in each one with a sharp knife.
3. In a bowl, mix together the spinach, cream cheese, Parmesan, mozzarella, mayonnaise, Italian seasoning, and red pepper flakes if you’re using them. This is going to create a filling that’s as rich and comforting as a patchwork quilt.
4. Spoon the filling into the pockets you’ve made in the chicken breasts, and then seal them shut with a couple of toothpicks. It’s like you’re sealing up a letter full of good news.
5. Season the outside of the chicken with olive oil, garlic powder, salt, and pepper.
6. Place the chicken breasts in a greased baking dish, settling them in there like settling into a porch rocker at the end of the day.
7. Bake in the oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the middle. A meat thermometer should read 165°F (74°C).
8. Once done, let it rest for a few minutes—it’s always good to let things settle down, just like giving your pie a rest before that first slice.
Variations & Tips
– If you’ve got garden herbs begging to be used, chop up some fresh parsley, dill, or chives to add to your stuffing mixture.
– For those who are looking after their heart, swap out the mayonnaise for Greek yogurt; you’ll get that creamy texture with a little less guilt.
– You can also add a few finely chopped sun-dried tomatoes or olives into the mix to make each bite a little reminder of the summer’s bounty.
– And remember, the best recipes are the ones that carry a bit of your own story. Don’t be afraid to add a personal touch, like a secret spice your family holds dear, to make it uniquely yours.
