Beignets Fourrés à la Crème
Instructions
1. Prepare the Dough:
- In a small bowl, dissolve the yeast in warm water (110°F/45°C) and let it sit for about 5 minutes, or until foamy.
- In a large bowl, combine the flour, sugar, and salt.
- Add the melted butter, eggs, milk, and the yeast mixture. Mix until a smooth dough forms.
- Turn the dough onto a floured surface and knead for about 5 to 7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in volume.
2. Shape and Fry the Beignets:
- Turn the risen dough onto a floured surface and roll it out to about 1/2 inch thick.
- Use a round cutter to cut out beignet shapes.
- Place the cut beignets on a baking sheet lined with parchment paper and cover with a cloth. Let them rise for another 30 minutes.
- Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
- Fry the beignets in batches, turning them until golden brown on both sides, about 1 to 2 minutes per side.
- Remove beignets with a slotted spoon and drain on paper towels.
3. Prepare the Cream Filling:
- In a mixing bowl, whisk the heavy cream until it starts to thicken.
- Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
- Transfer the whipped cream to a pastry bag fitted with a small round tip.
4. Assemble the Beignets:
- Once the beignets have cooled slightly, use a small knife to create a small hole in the side of each beignet.
- Pipe the whipped cream into the hole to fill each beignet.
5. Coat and Serve:
- Roll the filled beignets in granulated sugar to coat them evenly.
- Serve the beignets immediately or store them in an airtight container in the fridge for up to two days.
Tips for Perfect Beignets:
- Ensure the oil is at the right temperature (350°F/175°C) to avoid greasy beignets.
- Be gentle when filling the beignets to avoid tearing them.
- For the best texture, enjoy the beignets warm, but they are also delightful at room temperature.
