Instructions

1. Prepare the Dough:

  1. In a small bowl, dissolve the yeast in warm water (110°F/45°C) and let it sit for about 5 minutes, or until foamy.
  2. In a large bowl, combine the flour, sugar, and salt.
  3. Add the melted butter, eggs, milk, and the yeast mixture. Mix until a smooth dough forms.
  4. Turn the dough onto a floured surface and knead for about 5 to 7 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in volume.

2. Shape and Fry the Beignets:

  1. Turn the risen dough onto a floured surface and roll it out to about 1/2 inch thick.
  2. Use a round cutter to cut out beignet shapes.
  3. Place the cut beignets on a baking sheet lined with parchment paper and cover with a cloth. Let them rise for another 30 minutes.
  4. Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
  5. Fry the beignets in batches, turning them until golden brown on both sides, about 1 to 2 minutes per side.
  6. Remove beignets with a slotted spoon and drain on paper towels.

3. Prepare the Cream Filling:

  1. In a mixing bowl, whisk the heavy cream until it starts to thicken.
  2. Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
  3. Transfer the whipped cream to a pastry bag fitted with a small round tip.

4. Assemble the Beignets:

  1. Once the beignets have cooled slightly, use a small knife to create a small hole in the side of each beignet.
  2. Pipe the whipped cream into the hole to fill each beignet.

5. Coat and Serve:

  1. Roll the filled beignets in granulated sugar to coat them evenly.
  2. Serve the beignets immediately or store them in an airtight container in the fridge for up to two days.

  • Ensure the oil is at the right temperature (350°F/175°C) to avoid greasy beignets.
  • Be gentle when filling the beignets to avoid tearing them.
  • For the best texture, enjoy the beignets warm, but they are also delightful at room temperature.
