1. Line a baking sheet with parchment paper or wax paper. Set aside.
2. In a medium saucepan over medium heat, combine sugar and corn syrup. Stir continuously until the mixture comes to a full boil.
3. Remove the saucepan from heat and stir in the entire jar of peanut butter until well combined.
4. Put the crispy rice cereal in a large bowl, and pour the peanut butter mixture over the cereal. Gently mix until the cereal is completely coated.
5. Quickly, before the mixture cools, drop by spoonfuls onto the prepared baking sheet. Shape into cookie rounds if needed.
6. Press a single chocolate kiss candy into the center of each cookie while the mixture is still warm.
7. Allow the cookies to cool and set at room temperature until firm, about 30 minutes to 1 hour.
8. Once set, cookies can be stored in an airtight container at room temperature for up to a week.
Tips:
• If the mixture is too thick, you can heat it up a little bit again.
• For a healthier version, you can substitute the sugar with honey or agave syrup.
• You can also add a 1/2 teaspoon of vanilla extract to the peanut butter mixture for added flavor.
