Observe the change: Once the sugar has dissolved, watch the syrup carefully. It will start to bubble after a minute or two. The bubbles will become larger then smaller as the water evaporates.
Look for the golden hue: After 4 to 5 minutes, the syrup turns a beautiful amber color. This is the caramel stage you are looking for.
Cool: immediately remove the syrup from the heat. Slowly pour in the heavy cream while whisking continuously. Be careful, as the mixture will bubble vigorously.
Add flavorings: Add the vanilla extract and a pinch of salt, whisking until you have a silky smooth caramel.
